Description
A gooey, chewy twist on the campfire classic, these smore cookies feature toasted marshmallow tops, melted chocolate chunks, and a buttery graham-cracker dough.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2¼ cups all-purpose flour
¾ cup crushed graham crackers
1 tsp baking soda
½ tsp kosher salt
1 cup chocolate chunks
½ cup chocolate chips
12 marshmallows, halved
Instructions
1. Cream butter and sugars together until light and fluffy.
2. Add eggs and vanilla; beat well.
3. Whisk together flour, crushed graham crackers, baking soda, and salt in a separate bowl.
4. Gradually combine wet and dry ingredients.
5. Stir in chocolate chunks and chips.
6. Chill dough for 30–60 minutes.
7. Preheat oven to 350°F. Line baking sheet with parchment.
8. Scoop 2-tbsp dough balls and place on tray.
9. Top each with marshmallow half and chocolate chunk.
10. Bake 10–12 minutes or until golden at edges.
11. Cool on tray before serving.
Notes
Freeze extra dough for up to 2 months.
For best results, freeze marshmallows before topping to prevent melting too fast.
