Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked rice
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup Monterey Jack cheese
- 4 large flour tortillas
- 2 tbsp butter
- 1 cup shredded Mexican blend cheese (for exterior)
- Optional toppings: lettuce, tomatoes, green onions, salsa
Instructions
1. In skillet, brown beef over medium heat; drain fat. Add taco seasoning and simmer.
2. Lay tortillas flat; fill with beef, rice, sour cream, and cheese. Roll tightly.
3. Heat skillet to medium-low; spread butter on burrito exterior.
4. Sprinkle cheese on pan; place burrito seam-side down, pressing into cheese. Grill 2–3 min per side until golden.
5. Slice and serve warm with ranch or salsa.
Notes
Low & slow heat makes cheese melt perfectly.
Use two types of cheese for stretch and flavor.
Make ahead and reheat in air fryer for crispiness.
