Description
Creamy Homemade Chicken and Dumplings features tender chicken, fluffy drop dumplings, and a rich veggie-packed broth. One-pot comfort food ready in 45 minutes for family dinners.
Ingredients
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken thighs, bite-sized
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1/4 cup flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp thyme
- 1 tsp poultry seasoning
- Salt & pepper
- 1 cup frozen peas (opt)
- Parsley
- Dumplings:
- 1 cup flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp butter, melted
- 1/2 cup milk
Instructions
1. Heat butter and oil; brown chicken 5-7 min, remove.
2. Sauté onion, carrots, celery 5 min; add garlic 1 min.
3. Stir in flour 2 min; whisk broth, add cream, seasonings, chicken; simmer 15 min.
4. Mix dumpling dough.
5. Drop dumplings on stew; cover, cook 12-15 min.
6. Add peas; garnish.
Notes
Use thighs for juiciness. Brown well for flavor.
No peeking on dumplings.
Reheat stovetop with broth splash.
GF: 1:1 flour. Dairy-free: Coconut milk.
Freezes well without dumplings.
