Ingredients
- 4 boneless skinless chicken breasts pounded thin
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup panko breadcrumbs
- 1 cup Italian breadcrumbs
- ½ cup grated Parmesan plus more
- 1 tsp garlic powder
- Salt and pepper
- ½ cup olive oil
- 24 oz marinara sauce
- 8 oz mozzarella sliced
- Fresh basil
Instructions
1. Preheat oven to 450°F. Season and pound chicken thin.
2. Dredge in flour, egg, then breadcrumbs.
3. Fry 2-3 min per side until golden.
4. Top with sauce and cheese; bake 8-10 min.
5. Garnish with basil.
