3 packages cream cheese
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
½ teaspoon ground cinnamo
½ cup mashed ripe banana
2 cups whole milk
½ cup granulated sugar
3 tablespoons cornstarch
2 large egg yolks
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
Seeds from ½ vanilla bea
3 bananas
1 tablespoon fresh lemon juice
1 cup vanilla wafer crumbs
½ cup all-purpose flour
½ cup unsalted butter
¼ cup light brown sugar
1 teaspoon ground cinnamo
1 ½ cups heavy cream
¼ cup powdered sugar
1 teaspoon pure vanilla extract


Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan. Combine the vanilla wafer crumbs, melted butter, and granulated sugar in a medium bowl. Press the mixture into the bottom of the prepared springform pan. Bake for 10 minutes, then let it cool
  2. In a large bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, then beat in the eggs one at a time. Stir in vanilla extract, ground cinnamon, and mashed banana. Pour over the crust and bake for 50-60 minutes until edges are set. Cool in the ove
  3. In a saucepan, whisk together milk, granulated sugar, cornstarch, and egg yolks. Cook over medium heat until thick. Stir in butter and vanilla extract. Chill for at least 2 hours
  4. Slice bananas and toss with lemon juice. Mix crunch topping ingredients and bake until golde
  5. Assemble by spreading pudding over cheesecake, adding banana slices, then whipped cream, and finally the crunch topping

Notes

Use room temperature cream cheese for a smooth filling.

Do not over-mix the cheesecake batter.
