Description

This Banana Almond Butter Oatmeal is a comforting and nutritious breakfast that combines rolled oats, ripe bananas, and creamy almond butter for a delicious start to your day.

Ingredients

Scale

1 cup rolled oats
2 cups milk (dairy or non-dairy)
1 ripe banana
1/4 cup creamy almond butter
12 tablespoons maple syrup or honey (optional)
1/2 teaspoon vanilla extract
Pinch of salt
Optional toppings (cinnamon, chia seeds, extra banana slices, almond butter, chopped almonds)

Instructions

  1. In a medium saucepan, combine the rolled oats, milk, and a pinch of salt. Stir well
  2. Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low
  3. Mash about half of the ripe banana directly into the oats. Stir in the almond butter, maple syrup (if using), and vanilla extract
  4. Simmer on low, stirring frequently for about 5-7 minutes until the oats absorb most of the liquid and reach a creamy consistency
  5. Remove from heat, pour into a bowl, and garnish with banana slices and any optional toppings
  6. Enjoy immediately

Notes

Use ripe bananas for better sweetness and creaminess.

Adjust liquid to achieve desired consistency.
