1 pound mixed mushrooms, sliced

1/4 cup balsamic vinegar
1 tablespoon brown sugar
4 ounces goat cheese, crumbled
1/2 cup shredded mozzarella cheese
2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare Your Dough: If using store-bought dough, let it come to room temperature for 30 minutes. Preheat your oven to 450°F (230°C) with a pizza stone or baking sheet inside
  2. Sauté the Mushrooms: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the sliced mushrooms and cook until they begin to brown. Add garlic, thyme, salt, and pepper, cooking for 2 more minutes
  3. Create the Balsamic Glaze: Add balsamic vinegar and brown sugar to the skillet and simmer until it thickens into a glaze, about 3-5 minutes
  4. Stretch the Dough: Roll your pizza dough into a 12-inch circle on a floured surface and transfer it to parchment paper or a pizza peel
  5. Assemble the Pizza: Brush remaining olive oil on the dough, distribute the mushrooms, and top with goat cheese and optional mozzarella
  6. Bake the Pizza: Slide the pizza onto the preheated stone or sheet and bake for 12-15 minutes until golden brow
  7. Finish and Serve: Let the pizza cool for a couple of minutes before garnishing with parsley and serving
