Ingredients
2 medium Apples
1 tablespoon Unsalted Butter
2 tablespoons Light Brown Sugar
1 teaspoon Ground Cinnamo
¼ teaspoon Ground Nutmeg
Pinch of Ground Cloves
1 tablespoon Water or Apple Juice
½ teaspoon Vanilla Extract
8 small Flour Tortillas
4 tablespoons Unsalted Butter, melted
½ cup Shredded Mozzarella Cheese
2 tablespoons Powdered Sugar (optional)
Maple Syrup or Honey (optional)
Instructions
- Prepare the Apples: Peel, core, and finely dice the apples
- Cook the Apple Filling: Melt 1 tablespoon of unsalted butter in a skillet, add apples, and cook for 3-5 minutes
- Sweeten and Spice: Stir in brown sugar, spices, and water/apple juice, and cook for another 5-7 minutes until tender
- Prepare the Tortillas: Lay out four tortillas and sprinkle half of the cheese over them
- Assemble the Quesadillas: Spoon the apple filling over the cheese, sprinkle with remaining cheese, and top with remaining tortillas
- Brush with Butter: Brush the top of each quesadilla with melted butter
- Cook the Quesadillas: Cook in a skillet over medium heat until golden and crispy
- Repeat and Serve: Cut cooked quesadillas into wedges and repeat the process
- Garnish and Enjoy: Serve warm with powdered sugar, maple syrup, or honey
