Description

This 30-Minute Cauliflower Chicken Soup is comforting, nourishing, and incredibly easy to prepare. With a few simple ingredients like chicken, cauliflower, and broth, it creates a delicious meal that is perfect for busy evenings.


Ingredients

1 tablespoon Olive Oil
1 medium Yellow Onion, chopped
2 Carrots, peeled and diced
2 Celery Stalks, diced
2 cloves Garlic, minced
1 teaspoon Dried Thyme
1/2 teaspoon Dried Oregano
1/4 teaspoon Ground Black Pepper
1.5 pounds Boneless, Skinless Chicken Breast, cut into 1-inch cubes
6 cups Low-Sodium Chicken Broth
1 large head Cauliflower (about 2 pounds), cored and cut into 1-inch florets
1/2 cup Fresh Parsley, chopped, for garnish
Salt to taste


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook for 5-7 minutes until softened
  2. Stir in the minced garlic, dried thyme, dried oregano, and black pepper. Cook for another minute until fragrant
  3. Push the vegetables to one side and add the cubed chicken to the empty side. Cook for 3-4 minutes until browned slightly
  4. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and add the cauliflower florets
  5. Cover and simmer for 10-12 minutes until the chicken is cooked through and the cauliflower is tender
  6. Season with salt to taste, stir in half of the fresh parsley, and serve hot garnished with remaining parsley

Notes

For a creamier texture, blend a portion of the soup with an immersion blender.
