This 30-Minute Cauliflower Chicken Soup is comforting, nourishing, and incredibly easy to prepare. With a few simple ingredients like chicken, cauliflower, and broth, it creates a delicious meal that is perfect for busy evenings.
Ingredients
1 tablespoon Olive Oil
1 medium Yellow Onion, chopped
2 Carrots, peeled and diced
2 Celery Stalks, diced
2 cloves Garlic, minced
1 teaspoon Dried Thyme
1/2 teaspoon Dried Oregano
1/4 teaspoon Ground Black Pepper
1.5 pounds Boneless, Skinless Chicken Breast, cut into 1-inch cubes
6 cups Low-Sodium Chicken Broth
1 large head Cauliflower (about 2 pounds), cored and cut into 1-inch florets
1/2 cup Fresh Parsley, chopped, for garnish
Salt to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook for 5-7 minutes until softened
- Stir in the minced garlic, dried thyme, dried oregano, and black pepper. Cook for another minute until fragrant
- Push the vegetables to one side and add the cubed chicken to the empty side. Cook for 3-4 minutes until browned slightly
- Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and add the cauliflower florets
- Cover and simmer for 10-12 minutes until the chicken is cooked through and the cauliflower is tender
- Season with salt to taste, stir in half of the fresh parsley, and serve hot garnished with remaining parsley

For a creamier texture, blend a portion of the soup with an immersion blender.
