12 ounces Dried Spaghetti or Linguine
1 tablespoon Olive Oil
3 cloves Garlic, minced
1 pound Fresh Asparagus, trimmed and cut into 1-inch pieces
1/2 cup Vegetable Broth
1/4 cup Fresh Lemon Juice
Zest of 1 large Lemo
1/4 teaspoon Red Pepper Flakes
1/2 cup Grated Parmesan Cheese
1/4 cup Fresh Parsley, chopped
Salt and Freshly Ground Black Pepper to taste


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti or linguine and cook according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta thoroughly and set it aside
  2. Sauté the Garlic: While the pasta cooks, heat the olive oil in a large skillet or non-stick pan over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 30-60 seconds until the garlic becomes fragrant
  3. Add Asparagus: Add the trimmed asparagus pieces to the skillet. Stir-fry the asparagus for 3-5 minutes until tender-crisp
  4. Deglaze with Broth: Pour in the vegetable broth and bring it to a gentle simmer. Allow it to cook for 1-2 minutes
  5. Combine with Pasta: Add the cooked and drained pasta directly into the skillet and toss everything together well
  6. Finish the Sauce: Pour in the fresh lemon juice and add the lemon zest. Sprinkle in the grated Parmesan cheese and chopped fresh parsley. Toss everything together vigorously and add reserved pasta water as needed
  7. Season and Serve: Taste and season generously with salt and freshly cracked black pepper. Serve immediately, garnished with extra Parmesan cheese

Notes

Don’t overcook the pasta, it should be al dente.
